Apple peels and green tomatoes?
Here's a new and interesting study. Scientist have found (and I emphasize these are respected scientific journals, not Internet crackpots) that certain foods have chemicals that strongly discourage muscle atrophy. The substances are ursolic acid, which is found in apple peels and a few other foods mentioned in the articles below, and tomatidine, which is found in green tomatoes.

Of course there is no study of these substances specifically in KD subjects, but still worth a read.

There is a link to KD studies and mitochondrial dysfunction, Dan. New studies show truncated fragments of the expanded AR combining in the cytoplasm after the AR has traveled through the nucleus. http://www.ncbi.nlm.nih.gov/pubmed/19228953, shows the link to Bax which is affected by ursolic acid.
Hope I posted the right link.
My own health appears to have improved (at least energy levels have) after taking L-carnitine, Q-10 and yes regular servings of applesauce (skins included). Studies done with body-builders show weight loss but not significant muscle gain with ursolic acid

Just have to add, "an apple a day" Un peeled.
(ursolic acid is also in cranberries and is thought responsible for the antibacterial benefit of cranberry juice)
